Dominic Barham, 34, of Northumberland Heath, London was awarded a bronze medal at one of the top worldwide cooking competitions, the prestigious Hotelympia, La Parade des Chefs competition (19-23 February).
Dominic was a member of the six-strong Directors Table culinary team. He is an executive chef for Directors Table, the fine dining London-based division of Sodexho, the UK’s leading catering and support services provider.
Hotelympia is the UK’s largest foodservice show and it atracts top chefs and hospitality figures from around the world. The competition is considered one of the top competitions of its kind worldwide, and has a major industry following.
Visitors watched teams of chefs from all over the world work in glass-enclosed kitchens, to prepare a three-course meal for 100 people at the show.
The team, which included top chef Anton Edelmann, developed the menu for the competition which included:
Starter - “Emphasis on Seafood” - Langoustine Tortellini, Seared Scallop, Tuna Tartare
Main - Slow-Braised Ox Tail and Fillet of Welsh Beef on Horseradish Scented Cauliflower Purée
Dessert - “Citrus Affair” - Cardamom Flavoured Orange Tart, Burnt Orange Ice Cream, Pink Grapefruit Cappuccino, and Lemon Tuile
The team was awarded a bronze medal following judging on everything from food hygiene, timing, efficiency, service, skills and food preparation, to the flavour, texture and presentation of the food.
